The rind of the nutmeg is used to prepare squash, syrup (with medicinal properties), jam, jelly, chunks etc
Nutmeg wine is also prepared using the rind and by adding spices and medicinal herbs.
The Department of Plantation Crops and Spices, College of Horticulture, Kerala Agricultural University, regularly collects the nutmeg rind from Kallingal farm for research in food processing.
